Simmer frozen peas in a small saucepan with a splash of water for 3 minutes. Add butter and mint sauce, then lightly mash. Season with salt.

Mix mayonnaise, capers, dill pickles, and lemon juice. Refrigerate until serving.

Whisk flour, baking powder, and salt together. Pour in cold beer and ice water, stirring until just combined. A few lumps are fine — do not over-mix.

Fry the fish

Heat oil to 180°C (360°F). Dust fish fillets with flour, then dip in batter, letting excess drip off. Fry for 6–7 minutes, turning once, until golden and crispy. Drain on a wire rack.

Re-fry the chips at 190°C (375°F) for 3–4 minutes until golden and crispy. Season with salt immediately.
