Golden quiche Lorraine with bacon and creamy custard filling sliced on a wooden board

Quiche Lorraine is a timeless French classic from the Lorraine region. A buttery, flaky crust cradles a rich filling of smoky bacon, eggs, and cream. No cheese, no vegetables — the original is pure and unadorned, relying on quality ingredients and a silky custard. Perfect for brunch, lunch, or a light dinner with a green salad.

1

Blind bake the crust

Preheat oven to 190°C (375°F). Prick the pie crust with a fork, line with parchment and pie weights, and bake for 15 minutes. Remove weights and parchment, bake 5 more minutes until lightly golden. Set aside.

2

Cook the bacon

Cook the lardons in a skillet over medium heat until just crisp. Drain on paper towels. Spread evenly in the bottom of the par-baked crust.

3

Make the custard

Whisk together eggs, heavy cream, milk, nutmeg, salt, and pepper until smooth. Do not over-beat — you want to avoid creating too many air bubbles.

4

Fill and bake

Pour the custard over the bacon in the crust. Bake at 180°C (350°F) for 35–40 minutes until the custard is set but still has a slight jiggle in the center.

5

Cool and serve

Let the quiche cool for at least 20 minutes before slicing. It can be served warm, at room temperature, or cold.

Pro Tips

  • Traditional Quiche Lorraine does not include cheese — that variation is called Quiche au Fromage.
  • The secret to a silky custard is using heavy cream and not over-baking. The center should wobble slightly when removed from the oven.
  • Blind baking the crust prevents a soggy bottom — don't skip this step.
