2 Instructions

1

Mix the kofta

Combine lamb, grated onion, garlic, cumin, coriander, cinnamon, paprika, salt, cayenne, parsley, mint, egg, and breadcrumbs. Mix until well combined.

2

Shape onto skewers

Divide the mixture into 8 portions. Shape each around a skewer into an elongated oval. Chill for 10 minutes if time allows.

3

Air fry

Preheat air fryer to 200°C (400°F). Place skewers in the basket, spray with oil. Cook for 10-12 minutes, turning halfway, until charred and cooked through.

Pro Tips

  • Squeeze the grated onion dry before adding to the mixture. Excess moisture can make the kofta fall apart.
  • Chilling the shaped kofta for 10 minutes helps them hold together during cooking.
