Air fryer lamb kofta brings the rich, aromatic flavours of Moroccan street food to your dinner table. Ground lamb is blended with cumin, coriander, cinnamon, and fresh herbs, then cooked to juicy perfection with beautifully charred edges in the air fryer. Serve in warm pita with tzatziki or tahini sauce.

2 Instructions
Mix the kofta
Combine lamb, grated onion, garlic, cumin, coriander, cinnamon, paprika, salt, cayenne, parsley, mint, egg, and breadcrumbs. Mix until well combined.
Shape onto skewers
Divide the mixture into 8 portions. Shape each around a skewer into an elongated oval. Chill for 10 minutes if time allows.
Air fry
Preheat air fryer to 200°C (400°F). Place skewers in the basket, spray with oil. Cook for 10-12 minutes, turning halfway, until charred and cooked through.
Pro Tips
- Squeeze the grated onion dry before adding to the mixture. Excess moisture can make the kofta fall apart.
- Chilling the shaped kofta for 10 minutes helps them hold together during cooking.
