Place the marinated chicken and all the marinade into a tagine or heavy-bottomed Dutch oven over medium heat. Cook for 5 minutes, turning occasionally, until the chicken begins to brown lightly.

Add water and simmer

Pour in the water, bring to a gentle simmer, then reduce the heat to low. Cover and cook for 35 minutes, turning the chicken halfway through.

Add preserved lemons and olives

Add the preserved lemon quarters and green olives to the tagine. Cover and continue cooking for another 20 minutes until the chicken is fall-off-the-bone tender.

Sprinkle with the remaining fresh cilantro and parsley. Serve directly from the tagine with couscous or crusty Moroccan bread.
