Couscous royal is the grandest of all Moroccan couscous dishes — a majestic platter of fluffy steamed couscous topped with tender lamb, chicken, spicy merguez sausages, and an array of colourful vegetables. This is the dish served at weddings, family gatherings, and celebrations across the Maghreb.

Start the stew

Brown lamb and chicken in a large pot or couscoussier. Add sliced onions, turmeric, ginger, cumin, saffron, and ras el hanout. Cook for 2 minutes.

Simmer the meat

Add grated tomatoes, tomato paste, and enough water to cover. Bring to a boil, then simmer for 45 minutes until the meat is tender.

Add vegetables

Add carrots, turnips, and cabbage to the pot. Cook for 15 minutes, then add courgettes and chickpeas. Cook for another 10 minutes.

Steam the couscous

Meanwhile, prepare couscous according to package directions, or steam it in the top of the couscoussier. Fluff with butter.

Grill the merguez

Grill or pan-fry the merguez sausages until cooked through and slightly charred.

Assemble and serve

Mound the couscous on a large platter. Arrange meat and vegetables on top. Garnish with fresh herbs. Serve the broth on the side.

  • A couscoussier is ideal but a large pot with a steamer basket works well too.
  • Steam the couscous twice for the fluffiest texture, rubbing with butter between steamings.
