Lasagna bolognese is the ultimate Italian comfort food — layers of rich, slow-simmered meat ragu, silky béchamel sauce, and tender pasta baked to golden, bubbling perfection. This classic recipe from Emilia-Romagna is a labour of love that feeds a crowd and tastes even better the next day.

Make the ragu
Cook pancetta in a large pot until crispy. Add beef and brown all over. Add onion, carrots, celery, and garlic, cooking for 5 minutes. Pour in wine and let reduce. Add tomatoes, tomato paste, oregano, and bay leaf. Simmer for 45 minutes.
Make the béchamel
Melt butter in a saucepan. Whisk in flour and cook for 1 minute. Gradually whisk in milk, stirring constantly until thickened. Season with salt, pepper, and nutmeg.
Assemble the lasagna
Spread a thin layer of ragu on the bottom of a baking dish. Layer pasta sheets, ragu, béchamel, mozzarella, and Parmesan. Repeat for 3-4 layers, finishing with béchamel and plenty of cheese.
Bake
Cover with foil and bake at 180°C (350°F) for 30 minutes. Remove foil and bake for another 15 minutes until golden and bubbling. Rest for 10 minutes before serving.
Pro Tips
- Let the lasagna rest for 10 minutes after baking. This helps the layers set and prevents it from collapsing when sliced.
- Making the ragu a day ahead deepens the flavour significantly.
- No-boil lasagna sheets work perfectly and save time, but ensure they are fully covered by sauce.
