Cook the potatoes and onion

Heat olive oil in a 10-inch non-stick skillet over medium heat. Add sliced potatoes and onion. Cook gently for 20–25 minutes, turning occasionally, until potatoes are very tender but not browned. They should be soft enough to break apart easily.
