This Moroccan spiced cauliflower transforms humble florets into a vibrant, flavour-packed dish using the air fryer. Coated in harissa paste, cumin, and turmeric, the cauliflower roasts until tender with beautifully charred edges. It makes a stunning side dish or a light vegetarian main served with couscous and yoghurt.

2 Instructions
Season the cauliflower
In a large bowl, whisk together harissa paste, olive oil, cumin, turmeric, salt, and pepper. Add cauliflower florets and toss until well coated.
Air fry
Preheat air fryer to 190°C (375°F). Place florets in the basket in a single layer. Cook for 12-15 minutes, shaking halfway, until tender and charred at the edges.
Finish and serve
Transfer to a serving dish, squeeze lemon juice over the top, garnish with cilantro, and drizzle with yoghurt.
Pro Tips
- Cut florets into similar sizes for even cooking.
- Do not overcrowd the basket. Cook in batches to ensure the cauliflower roasts rather than steams.
