Prepare the eggplants

Pierce eggplants with a fork and grill or broil whole until the skin is charred and the flesh is soft, about 15 minutes. Alternatively, roast at 220°C (425°F) for 20 minutes.

Cook the base

Heat olive oil in a pan. Cook garlic until fragrant, about 30 seconds. Add grated tomatoes, cumin, paprika, salt, pepper, and chilli flakes. Simmer for 10 minutes until thickened.

Combine

Scoop out the eggplant flesh, chop roughly, and add to the tomato mixture. Cook for 5 more minutes, breaking up the eggplant with a spoon.

Finish and serve

Stir in cilantro, parsley, and lemon juice. Taste and adjust seasoning. Serve warm or at room temperature with crusty bread.
